For the past 3 years, we had continued to make our Taiwanese-style pork sausage using the traditional way of stuffing into natural hog casings and convection-drying at precise temperatures. The result was a fresh sausage that you would normally find at the frozen section of your favorite retail outlet.
We have, naturally, made it our daily mission to continue experimenting with ways to improve our products. Last May, we succeeded in making the Hamton Premium Pork sausage supermarket-ready, thanks largely to a Western-style, slow-cooking method called sous vide.
Using only the safest materials and vacuum technology, this new process yields a product that is already cooked, needing only a few minutes' searing to get that appealing color, for your convenience. Sous vide, which locks in all the spices and juices from the meat, also promises a juicier texture, and generally a more flavorful sausage.
We also decided to make changes on the casings used. Using Viskase cellulose casings, which need to be peeled off prior to pan-frying or pan-searing, we are now better-placed to guarantee a more even and more consistent sizing for the Hamton Premium Pork sausage. Hamton Premium Pork Sausages have been mistaken to be a hotdog on more than one occasion, as an expected consequence. But those who have tried and now understand the quality of this product, know very well that it has always been and remains to be a breed apart.
